After a busy, busy day at school where I was busy patting myself on the back for having all my homework grading done up until today's work and typing up a huge presentation for the whole school, I rushed home to make dinner. I decided on spaghetti with whole wheat noodles. I got a little eager with my pasta and put it in way before I needed to. So my pasta was done far before my salad was chopped and my sauce was simmered. What did I do? Well I turned off the heat and left it in the pot. You know, so it could soak up all the water like a damn sponge! So when the plates were made, it was spaghetti soup even after I drained it!
Gross.
But it didn't stop there. I had a few Pinterest recipes I wanted to get started on before I got to grading homework. Because it seemed like these would take just a few minutes...
So I tried the Crunchy Taco Chickpeas, No Bake Energy Bites, and I had round two with my apple chips.
Last night, on round one with the apple chips, I didn't have parchment paper, but I did have the assumption that you could substitute wax paper for parchment paper. I was wrong and ended up with some semi-burnt apple chips with strips of wax paper stuck to them. I like adding fiber to my diet, but not through wax paper.
Tonight, I had parchment paper and high hopes.
While the apple chips were baking for TWO HOURS, I decided to try my hand at the roasted chickpeas since I've seen them on Pinterest so much. I followed the recipe to a T and baked them according to the recipe. I was pretty upset to find that what the recipe writer described as crunchy was merely leathery for me.
Not ok.
But I packaged them up for the week and was going to eat my money's worth of leathery taco chickpeas.
Then I got really excited for the no-bake energy bites. Anything that's close to a no-bake cookie is alright by me. I had to make a last minute stop at the grocery store to get the ingredient I was missing...oatmeal. This is a healthy recipe and I keep hearing about steel cut oats, so I ASSUMED the recipe would call for steel cut oats.
Well, you know what happens when you assume...you end up with a no-bake energy bite that looks like it was made with birdseed. The chocolate just barely saves it. I went ahead and packaged them up for the week as well. You can just call me Big Bird this week.

Then, while I was staring at my birdseed no-bake energy bites, I realized that I could re toast the chickpeas to make them crunchy. Or I could burn the hell out of them so I wouldn't have to eat the leathery ones.
I had nothing to lose!
I got those bad boys out of the fridge and threw them back into the oven for far longer than suggested. And...
it worked! They were crunchy and tasty!
I finally got to take my apple chips out of the oven and they were all nearly perfect! So good! The sliced that got sliced really thin almost melted on your tongue!
So final score for the night was Disaster Recipes-2, Carlei-2. I'm breaking the tie with tomorrow's dinner!
